There are a lot of TV shows now that focus on this subject in some way. The Mentalist, Lie to Me, and Mental all have elements of this.
In doing some research recently I learned of a few clues to whether someone is lying or not.
Does he cover his mouth when he speaks? He may be trying to hide the lie.
Does he cover his ears? This may mean that he doesn't want to hear the lie he's telling.
Does he block his eyes by looking down, putting something between him and you, turning away or in some other way? This may mean he's afraid the lie will be detected, will show in his eyes, so he blocks them.
Are his arms folded protectively over his trunk? He may be showing you his vulnerability, and that he's decieving you.
Also putting hands behind the head are an indicator. Although this seems relaxed, it makes him look larger. This is something animals do to scare others away.
So now you are ready to detect a lie when you hear it, but I hope that won't be very often.
